Unfortunately IAA (Inter-App Audio) is a little buggy and fails to work sometimes depending on iOS version. Chances are it has something to do with samplerate differences between the various apps. Maybe try a multitrack project of 48kHz and see if tracks will arm with the AUM app selected? The iPhon...

If you paste onto a new track, which has no regions on it, the paste should be the same as what was copied with no conversions. However pasting onto a track that is mono, with stereo data, will convert to mono. And pasting onto a stereo track will always convert to stereo if needed.
