Also, how do you render a mixdown stereo track of all the recorded tracks?

If you open the arm/mute/solo button popup group, there is also a button for deleting the track completely. If you want to delete an exact portion of a track, you could use the punch locators to bracket the portion you want to delete, and turn the input fader all the way down. Arm the track, then start recording from a point before the punch in, and stop recording after the timebar passes the punch out.
