I was looking through the interface/mic options on the forums. The thing is I already own a number of pro level condenser mics, and I have a small desk with phantom power and an auxiliary send. I've read about other people using a standard av camcorder cable to interface the iPhone (I have a 3GS) to the mixer, using the aux send of the mixer to direct the mixer output to the mic input on the phone, and monitoring back to a stereo channel on the mixer. Has anyone out there experienced any issues with this? I don't really want to lay out significant money on mics, when I've already done that!

You might want to try a doc connector input, they're probably really cheap on the used market by now (since they are not compatible with the iPhone 4 or future devices), something like the belkin tunetalk lets you get a stereo line level input at much higher quality than the headset input port which has low dynamic range, bass cut, mono only.
