This may be related to why I'm only hearing only in my left earphone with a mic plugged into channel 1 of my US-800, and only in the right one with a mic plugged into channel 2...
I've tried unsuccesfully to get those blue arrows to come up by long pressing on/around a track's large "arm" button. Nothing happens - it says "mono" and that's it. I'm sure there's a simple answer!

I should add that I'm able to record two channels into a single [mono] track, but of course I'd like to be able to record two mono tracks at once (or stereo, for that matter), e.g. guitar and vocal. I think that I'm supposed to use those non-appearing blue arrows to set one track to "mono 1," and the other to "mono 2," at which point Multitrack would allow me to arm the two tracks together.

Try it on a track that hasn't been recorded on, or a track that is already mono, because you wont be able to record mono on a track that is already stereo.

Not the issue - track *is* mono upon creation (as though it's defaulting to that selection), and that's where it stays. The odd thing is the first (and only other) time I tried recording, I swear I saw those blue arrows; and this was before updating to iOS 5. When you plug the tascam into the iPad, is there a brief popup which displays "USB 8x2" or something to that effect? And the IN vu meter (lower left) should display a stereo meter. As long as this VU meters is displaying stereo it means that an input is detected of at least stereo or more. Then you should have the selection ability (mono 1 through 8, stereo A through D) on an empty track. Or (mono 1 through mono 8) on a track that is already mono. Or (stereo A through stereo D) on a track that is already stereo. When the IN vu meter displays mono, you only get to record on mono or empty tracks.
You might have to power cycle the tascam and connect it again, but you should see the "USB 8x2" popup.
