So, in the most recent update, cached projects have a limit of 120min and uncached projects have a limit of 300min. Is there a way to tell if a project is uncached? Is there a way to ensure a song stays uncached or is there a way to uncache a project when ever I want to record for longer than 2hr?
Is it simply that projects with 8 tracks or less are automatically uncached and as soon as a 9th is added it is automatically cached?

Yep exactly, as soon as you add the 9th track the project will convert to "Cached", and you will see the "Optimizing" message. It converts to uncached when the 9th track is deleted. Note that this magic number may change in the future (only to be incremented though).
Also, you wont be able to add a 9th track if the project is already over 120 minutes, unless you shorten the project.
