So heres my situation, I'm trying to minimize my recording system for the Night Club i DJ at. I want to know, if given a 64Gb iPad with the MultiTrack DAW, whats the longest event that can be recorded ? Generally the night goes for 5hours +/- a few minutes so i need to be able to record a 5 hour set without interruption. Also, exporting audio, how does it export ? MP3 ? .Wav ? .Ogg etc ?

If the song has less than 8 tracks, you should be able to record up to 5 hours and no more. This is if you use 16/44 for recording. If you use higher bitrates/samplerates, the song length is still 5 hours, but you could get less recording time per region because of the 4 GB wav file limitation.
For example for stereo wav files:
16/44 -> 635MB per hour
24/48 -> 1.04GB per hour
24/96 -> 2.08GB per hour
At 16/44, you should have plenty of time before reaching the 4GB limit (actually 4.29GB limit)
However at 24/96 you'll only get around 2 hours before the region stops recording.
Sounds like you're using it as a field recorder. In this case, to export files of this size I would recommend using iTunes File Sharing to drag the song folders to your desktop, then access the wav files directly in the "Bins" folder.
For example for stereo wav files:
