I have searched around and not found how to do this. I have zipped up some songs , and I get a bunch of renamed .wav files that I can import with itunes, but not with the original track names or any of the mix parameters. Let alone any of the songs names themselves. Is there a way to do this without a restore of the phone or ipad.? I just want to be able to clean out the multitrack, and reload the files later if I want to work on them again or on another piece of hardware.

If you create the zip in MultiTrack (by touch-holding a song icon), the zip can be transfered to your computer for backup. In the zip, they contain everything to recreate the song in MultiTrack. Simply move them back into the Documents directory of MultiTrack using iTunes File Sharing, and tap them in MultiTrack to unzip them. They will be uncompressed back into a song.
The zip is in MultiTrack format, it wont work on any other hardware/software. You can dig out the raw bin files, but they aren't much use without the region information (which is in the Tracks.plist file). I'm working on a utility to render out the tracks, and possibly convert to other daw formats, but don't have a timeline for completion at this point.
