You cannot downgrade to iOS 6.13 or 6.1.4 anymore - Apple will not sign the install. Having a backup makes no difference. There is no hack. You have been warned.

You are responsible for backing up at a point you want to be able to restore to.

Backing up makes no difference. If you upgrade to iOS7, you cannot go back.

I see your point.
So restoring only restores apps and settings, not OS's.
Perhaps they will provide a backwards path in a few weeks.
OTOH I am having almost no issues except for the apps that ask if they can access you mic.
Answer yes if it is a music app.

I thought that restoring does also restore the OS, but as Apple won't 'sign' it, it won't activate, meaning you can't use it.
Apple withdraw the signing of old OS's soon after releasing a new one (in this case only a few days after) to try to stop Jailbreaking, although I have no idea how doing so achieves that purpose. So, you could have upgraded on the 18th of Sept and downgraded on the 20th, but you can't downgrade anymore. One of the many reasons iOS is not really a great platform for music making. That said, Mac OS is a pig to downgrade too.
I see the appeal of tape decks increasing every day.
